Sharing my Mom's Blueberry Muffin Recipe
2 cups self rising flour
3/4 cup sugar
1/2 tsp cinnamon
1/2 tsp apple pie spice
1/2 tsp ground cloves
1/2 cup oil
3 eggs
water
1 1/2 cup fresh or frozen blueberries
1 cup chopped nuts (optional)
Mix, flour, sugar and spices. Add oil and eggs, If batter is too thick add water a small bit at a time to make it thin enough to pour into muffin liners Add berries and chopped nuts last, mix slightly to incorporate Bake in muffin tins at 400 degrees for 20 - 25 minutes makes about 2 dozen muffins.
