soo we had to postpone

our church dinner, we had several who were sick and who had to work, and we are so small, it was just better to postpone, so I put the ham in the freezer and will thaw it next weekend and apply its goodies and cook it. 

So this weekend, we went ahead with our youth night, which was a time to watch movies, and we got the church all decorated, Dave darling made some of those easy peasy cake mix cookies...and they were yummy!!

And I made a batch of caramel popcorn, it was super easy!! I got the recipe from the recipe czar.com  But basically it was all about timing and no candy thermometers.  It was YUMMY!!! Everyone loved it..it is all gone, but it was so simple, I will make some more for here at home. 

Recipe...
1 cup of butter
2 cups of brown sugar
1/2 cup light corn syrup
1 tsp salt
1/2 tsp baking soda
1 1/2 tsp vanilla
24 cups popped popcorn
(can add peanuts or nuts if you like a cup to a cup and half)

mix together everything but baking soda and vanilla, and melt over low heat, stirring constantly bringing to a boil, once it is boiling quit stirring and let it boil for 5 minutes, then remove from heat, add soda and vanilla and stir it in good, then pour over popcorn and stir to coat the popcorn, then pour the popcorn in buttered pans and put in 250 degree oven for one hour, stirring every 10 to 15 minutes.  Remove from oven and put on waxed paper to cool, then break it up and store in a air tight container...YUMMY...full of TONS of calories..but it is Christmas...diet after NYD

  1. We love that kind of popcorn! I tend to eat too much of it when I make it, though~but like you say--diet after New Years Day! I mean, why spoil all this fun holiday eating??:) Hope you're having a great day.
